Italy is adored for it's barrel aged balsamic vinegar and vincotto.

The first olive trees were cultivated in Greece, the first cookbook in the world was written by Archestratos in 320BC. Greece has food traditions dating back 4000 years built on a sensible diet built around wheat, olive oil and wine.
Greece’s food has been made even better over the centuries by the assimilation of ideas. This has made the cuisine far more varied and vibrant. Greek food has become stronger through adopting ideas and dishes from the Balkans, Turkey and the Arab world. Greece has nine or so totally unique regional cuisines, ranging from Crete, Cyprus and the Ionian islands to Macedonia and Thessaloniki.
Greeks can make something beautiful out of almost anything, the Greek seas are filled with fresh fish and octopus; their farms are home to poultry, rabbit, pork, goats, and of course, lamb.
Their gardens overflow with eggplants, courgettes, cucumbers, silverbeet and tomatoes and their hillsides teem with wild oregano, thyme, olives and beehives that make amazing world famous honey. Greeks have made making yogurt an art form and this underpins another one of Greece's great culinary gifts to the world – dips.
There’s also feta, dolmades (stuffed grape leaves), moussaka, souvlaki and kebabs. The Greeks are kings of sweets. They gave the world baklava, the vanilla slice and the doughnut (“loukamades”).
